Zucchini Fritters


Some of my lovely friends wanted recipe  with some different criteria

  • Recipe  without bake
  • Recipe that contain vegetable
  • Easy to make
  • Kids  should love it

This post is  dedicated to all those Moms…

Grate zucchini


Sliced shallots lengthwise, egg, flour, baking powder, pepper and Salt( if required)


Mix all the above ingredients with  zucchini

Mix it ..

Mix it!


Scoop a tablespoon of batter for each fritter into hot skillet, flattening it with spoon or fork! Cook it until gloden brown


Serve warm with Dip!


  • 2 medium size Zucchini
  • 1 teaspoon of salt
  • 6 or 7 shallots
  • 1 large egg
  • ½ cup All purpose flour
  • ½ teaspoon Baking powder
  • Freshly ground black pepper
  • 2 tablespoon of olive oil or another oil of your choice, for frying


  • Grate zucchini, preferred  to be with large holes of the box grater
  • Toss shredded zucchini with salt in colander, leave it for 10 minutes, squeeze out the water  from zucchini
  • Return squeezed out  zucchini shreds into a bowl, add sliced shallots, egg, flour, baking powder, pepper and mix it. Check the salt, if required add more
  • Heat 2 tablespoons of oil in a large heavy skillet over medium-high heat
  • Drop small bunches of the zucchini mixture onto the skillet only a few at a time. flatten the batter in pan using fork or spoon. Cook the fritters over moderately high heat until the edges underneath are golden, about 2 to 3 minutes. Then flip it and fry them on the other side until browned, about another 2 to 3 minutes

Server warm with dip!
