Carrot Dates Cupcake


My Mother use to make carrot dates bundt cakes. She got this recipe from one of our family friend. My mom use to grate dates  whereas I prefer to  soak dates in milk and  puree  it , obviously need to reduce the amount of  eggs in recipe. She use to make sometime 10 such bundt cakes for Christmas!. Imagine the number of dates and carrot required. My father use to help her in  making this  batter and I use to help in cleaning the dates, grating the carrots ,breaking all eggs  and off-course licking the remaining batter from  the mixing bowl. All this was part of Christmas fun. Now I make this as cupcakes easy for sending it as snacks

Taking out the seed from dates. I just love to do this part. !



Soak Dates in warm milk  just  for 10 minutes, that’s it ! This  process makes dates soft, then  blend it to make purée


Goodness of dates purée going in the carrot mixture. Before adding Dates purée I like to beat egg,  sugar, oil and then grated carrot


Don’t behave like me; don’t  lick this batter. Carefully put it in  lined muffin tray !


Bake it !

Goodness of carrot , dates and dried cranberries is  ready !

Carrot Dates Dries Cranberries Cupcake
Servings: about 12 cupcakes


  • 1 ½ cup all purpose flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ½ teaspoon salt
  • 15 Dates, pitted
  • ½ cup Milk
  • 1 egg
  • 1/3 cup Oil
  • 1/3 cup Sugar
  • 1 cup Carrot
  • ½ teaspoon Vanilla extract
  • ½ teaspoon of cinnamon, clove and cardamom powder
  • 2 tablespoons of dried Cranberries


Preheat Oven to 350 degree F or 180 degree C , Prepare muffin tray

Sieve flour, baking powder, baking soda and salt together  twice, set aside.

Soak dates in warm milk for 10 minutes then grind it to make a paste like consistency

In a bowl beat egg, oil,sugar and grated . Add vanilla extract and cinnamon, clove, cardamom powder. Now add Dates purée

Fold in dry ingredients 1/3 portion at a time, mix until they are completely incorporated.

Finally fold in dried cranberries

Now carefully put batter to muffin liner to fill till 3/4

Bake it for 25-30 minutes, until the skewer comes out clean
