What is Buttermilk?
Buttermilk was originally the liquid left over after churning butter from cream, hence its name as buttermilk. Nowadays, it’s fermented from regular milk using bacterial cultures. The cultures consist of lactic acid bacteria, so called because they break down lactose into lactic acid.
Why buttermilk is important for a baker?
It is not just important, very important!
- When lactic acid reacts with baking soda it lift and lighten your baking item
- Buttermilk is a good source of probiotics.
- It is lower in fat when you compare with milk or cream. Now you have good reason for going with a recipe with buttermilk

Butter milk substitute No.1
Ingredients
- Cup milk (whole) milk or semi-skimmed (reduced fat) milk
- 1 tablespoon for lemon Juice or white wine vinegar
Method
- Pour lemon juice or vinegar into a jug.
- Add Milk
- Let stand for five minute
- Best substitute for Buttermilk is ready for any baking items
Tips:
- Full fat milk or semi-skimmed milk work best compare to skimmed (nonfat) milk
- If you need 2 cups of buttermilk , you don’t have to double lemon juice . Additional 1 teaspoon will do the job!
Butter milk substitute No.2
Ingredients
- 2/3 cup (200mls) Yogurt
- 1/3 cup(50mls) Milk
Method
Mix it and use as substitutes for buttermilk
