What is Buttermilk?

Buttermilk was originally the liquid left over after churning butter from cream, hence its name as buttermilk. Nowadays, it’s fermented from regular milk using bacterial cultures. The cultures consist of lactic acid bacteria, so called because they break down lactose into lactic acid.

Why buttermilk is important for a baker?

Butter milk substitute  No.1



  • Cup milk (whole) milk or semi-skimmed (reduced fat) milk
  • 1 tablespoon for lemon Juice or white wine vinegar


  • Pour lemon juice or vinegar into a jug.
  • Add Milk
  • Let stand for five minute
  • Best substitute for Buttermilk is ready for any baking items


  • Full fat milk or semi-skimmed milk work best compare to skimmed (nonfat) milk
  • If you need 2 cups of buttermilk , you don’t have to double lemon juice . Additional 1 teaspoon will do the job!

Butter milk substitute  No.2


  • 2/3 cup (200mls) Yogurt
  • 1/3 cup(50mls) Milk


Mix it and use as substitutes for buttermilk

  • ½ cup Greek Yogurt
  • ½ cup Milk
